Trifolin is a natural dihydrochalcone sweet flavonoid, primarily extracted from the tender leaves of *Caragana korshinskii*, a plant endemic to southern China. It appears as a white to light yellow crystalline powder, odorless, extremely sweet (approximately 300 times sweeter than sucrose), virtually calorie-free, non-hygroscopic, heat- and acid-resistant, and highly stable. It is readily soluble in hot water and ethanol, slightly soluble in cold water, and remains stable for extended periods when stored in a sealed container protected from light at 2–8°C. Its sweetness is pure, refreshing, and without bitterness or metallic aftertaste. It can improve the unpleasant flavors of other sugar substitutes, exhibits strong compatibility, and is often used in combination with erythritol, stevia, and mogrosides. Trifolin is not fermented by oral bacteria in the body, does not cause tooth decay, and participates almost entirely in blood glucose metabolism, making it suitable for those controlling blood sugar, weight, and those prone to tooth decay.
