Stevia extract is a natural sweetening active substance extracted from sweet tea leaves (Rubus idaeus), a specialty of Guangxi and other regions of China. It belongs to the tetracyclic diterpenoid glycoside class of compounds, with a chemical structure consisting of a kaurene-type diterpenoid core and a glucose unit, and the molecular formula C₃₂H₅₀O₁₃. It is mostly a white or off-white crystalline powder, odorless, with a pure, refreshing sweetness and no noticeable bitterness or metallic aftertaste. Its sweetness is extremely high, approximately 60–300 times that of sucrose, while its caloric content is only 1%–10% of sucrose. It hardly participates in blood glucose metabolism, has good water solubility, is heat- and acid-resistant, and stable, and does not easily deteriorate during long-term storage. It is not fermented by oral bacteria in the body, will not cause tooth decay, and is unlikely to cause blood sugar fluctuations, making it suitable for people who are controlling blood sugar, controlling weight, or prone to tooth decay. Modern research has found that stevia can simultaneously inhibit glucose and fructose transport proteins, reducing sugar absorption and helping to stabilize postprandial blood sugar and reduce metabolic burden.
