Introduction of Locust Bean Gum
Locust bean gum is a food additive obtained by processing the endosperm or endosperm powder of locust bean seeds as raw materials.
Locust bean gum is a pure natural hydrocolloid, one of the sources of natural dietary fiber.

Traits
White to slightly yellow powder, odorless or slightly odorous, can be dispersed in hot or cold water to form a sol.
With a molecular weight of about 300,000 Daltons, it is an extremely good thickening stabilizer. Refined grade locust bean gum solution has good clarity.
In the food industry, it is mainly used as a thickener, emulsifier and stabilizer.

Nature
➤ The viscosity increases with the concentration. When the concentration is 2%, the viscosity is 46.4MPa.s.
➤ Being a non-Newtonian fluid, its viscosity decreases with increasing shear velocity.
➤ Ordinary locust bean gum is only partially dissolved in cold water. It can be fully hydrated when heated to 85 degrees for more than 10 minutes, so that the maximum viscosity can be reached after cooling.
➤ Freezing had no effect on the viscosity of the locust bean gum solution, while refrigeration reduced the viscosity of the locust bean gum.
➤ PH has little effect on the viscosity of locust bean gum solution, that is, locust bean gum is relatively stable in acidic solution and alkaline solution.
Application of semi-refined locust bean gum
➤ Ice cream: Control the ice crystals of ice cream and significantly improve the freeze-thaw stability of ice cream. The dosage is 0.1-0.2%.
➤ Jelly: Locust bean gum and carrageenan are compounded into elastic jelly
➤ Stuffing/sauce: used in stuffing/sauce production to help improve food taste, texture and water separation.
➤ Meat products: It is used in the processing of meat products, western-style sausages, etc. to improve the water-holding performance, as well as to improve the organizational structure and freezing/melting stability of meat.
➤ Canned pet food: The compound of locust bean gum, seaweed gum and potassium chloride is widely used as a composite gelling agent in canned pet food.
➤Dairy products: Give dairy products freeze-thaw stability, enhance mouthfeel and improve texture.
➤ Cheese: Used in cheese production, it can accelerate the flocculation of cheese, increase the yield and improve the coating effect. The dosage is 0.2-0.6%.
➤ Juice concentrate: Locust bean gum is used to concentrate juice, improve the smoothness of the taste, and improve the suspension effect of solid substances in the juice.
Application of Refined Locust Bean Gum
➤ High-permeability jelly: Refined locust bean gum is used in high-permeability jelly to increase the gel strength of the jelly product, increase the toughness and Q-elasticity of the jelly, and improve the water quality.
