Tyrosinase has a β-sheet at both its N-terminus and C-terminus, and several α-helices between the N-terminus and C-terminus. This structure facilitates the formation of the active site of tyrosinase. Tyrosinase is widely distributed in microorganisms, animals, plants, and humans. In plants, tyrosinase is generally called polyphenol oxidase; in insects, it is generally called phenol oxidase; and in microorganisms and humans, it is called tyrosinase. Tyrosinase is a key enzyme in the synthesis of melanin in organisms and in the browning of fruits and vegetables.
