Malic acid, also known as hydroxybutyric acid, exists in three forms due to its asymmetric carbon atom: L-malic acid, D-malic acid, and DL-malic acid. L-malic acid is a product of the tricarboxylic acid cycle in the human body, meaning the body can only metabolize it. L-malic acid is naturally found in fruits such as apples, grapes, and lemons. Extraction from these fruits results in low concentrations and high costs, hindering large-scale industrial production. The synthesis of fumaric acid (trans-butenedioic acid) produces only DL-malic acid. Because the human body cannot metabolize DL-malic acid, despite its use as a food additive in Europe and America, there is a persistent sense of insecurity. Malic acid produced using microbial methods is entirely L-malic acid. Therefore, all malic acid currently used is produced by microorganisms, and L-malic acid has largely replaced DL-malic acid in food and pharmaceutical applications.
