1. Digestion and absorption of isomaltulose
Isomaltulose is not digested by saliva, gastric acid and pancreatic juice, and is not enzymatically hydrolyzed into glucose and fructose until it reaches the small intestine for absorption.
Because the structure of isomaltulose is similar to sucrose, it is directly absorbed and metabolized after digestion and decomposed into glucose and fructose, so there is no safety problem in eating it.

Usage


1. This product converts the disaccharide bond of sucrose from (1→2) to (1→6), and also converts non-reducing disaccharides (sucrose) into reducing disaccharides (isomerized sucrose), and its reducing power is about 52% of glucose. It is not easy to produce browning reaction.
2. The sweetness of this product is about half of that of sucrose, and it is suitable for low-sweetness candies, cakes, etc.
3. It can be used in baked foods and can replace sucrose at a ratio of 1:1, and generally there is no need to change the traditional formula. If the browning is too light, the baking temperature can be appropriately increased, or a small amount of fructose can be added.
Dosage: It can be used in appropriate amounts in ice cream, popsicles, candies, cakes, beverages, biscuits, bread, jam (excluding canned food), and mixed wine according to production needs.
