Product Description
Papain is a sulfhydryl (-SH) endopeptidase containing both protease and esterase activities. It exhibits broad specificity and strong hydrolytic ability against animal and plant proteins, polypeptides, esters, and amides. It also possesses synthetic capabilities, synthesizing protein hydrolysates into protein-like compounds. It is soluble in water and glycerol, with aqueous solutions being colorless or pale yellow, sometimes milky white; it is almost insoluble in organic solvents such as ethanol, chloroform, and ether. It is most effective at pH 5.7 (generally 3–9.5 is acceptable), but also functions in neutral or slightly acidic conditions, with an isoelectric point of 18.75. Its optimal temperature is 55–60℃ (generally 10–85℃ is acceptable), and it is highly heat-resistant, not completely inactivated even at 90℃. It is inhibited by oxidizing agents and activated by reducing agents. Enzyme dried without clarification is considered crude enzyme.
