What is Chymotrypsin Powder?
Chymotrypsin Powder is a proteolytic enzyme extracted from bovine pancreas. There are many types of chymotrypsin, including α-type, β-type, γ-type, δ-type, π-type, ε-type, etc. Among them, α-type chymotrypsin is the most stable. α-chymotrypsin consists of three peptide chains, which are connected by disulfide bonds. The active center is group 37, day 102, and serine 195. The active group is serine, so it belongs to serine protease. The hydroxyl group of the serine residue at position 195 on chymotrypsin is a strong nucleophile that can attack the carbonyl carbon on the peptide bond, causing the enzyme to covalently connect with the substrate to form a short enzyme-substrate intermediate, and then the unstable peptide bond breaks. Therefore, chymotrypsin has the function of endopeptidase, and it specifically hydrolyzes carboxyl-terminal aromatic amino acids (tyrosine, tryptophan, leucine) or side-bond large-volume hydrophobic residues such as methionine by cutting off the carboxyl-terminal peptide chains of tyrosine, tryptophan, and phenylalanine in the protein peptide chain.
