Calcium Acetate

Calcium acetate is the acetate salt of calcium, commonly known as calcium acetate, with the chemical formula C₄H₆CaO₄. It is a white crystalline powder, highly soluble in water, and often used as an organic calcium supplement or chemical reagent. Anhydrous calcium acetate is highly hygroscopic; therefore, it commonly exists in its monohydrate form (Ca(CH₃COO)₂·H₂O).

• Chemical Properties: Molecular weight 158.17, hygroscopic, decomposes at 160℃, soluble in both acidic and neutral environments.
• Medical Uses: Primarily used to treat calcium deficiency, prevent osteoporosis, and as an adjunct treatment for hyperphosphatemia in patients with chronic renal failure.
• Calcium Content: Each gram of calcium acetate contains approximately 250 mg of elemental calcium; absorption is not affected by gastric acid secretion.

1. Calcium Acetate

• Advantages: High effective calcium content, good solubility, neutral pH, absorption does not consume stomach acid, fast-acting, and free of harmful substances such as lead and arsenic.
• Suitable for: Especially suitable for children, pregnant women, the elderly, and people with low stomach acid secretion.

2. Calcium Carbonate

• Advantages: 40% calcium content, inexpensive, and few side effects.
• Disadvantages: Weakly alkaline, poor solubility, absorption consumes stomach acid.
• Suitable for: People with excessive stomach acid secretion and children.

3. Calcium Gluconate

• Advantages: An organic acid calcium, highly water-soluble and easily absorbed.
• Disadvantages: 9% calcium content, requiring a large dosage to achieve the daily recommended intake; not suitable for diabetics.
• Suitable for: Adolescents, children, pregnant women, postmenopausal women, and the elderly.

4. Calcium Lactate

• Advantages: An organic acid calcium, highly water-soluble.
• Disadvantages: With a calcium content of only 13%, the daily recommended intake is too high, which may easily lead to discomfort such as muscle weakness.
• Suitable for: Teenagers.

Calcium acetate is a food additive approved by national food safety standards. Its core functions include:

• Coagulant: Most typically used in soybean product processing, especially as a coagulant in tofu production. Compared to traditional gypsum (calcium sulfate), calcium acetate forms a more uniform gel structure in tofu, resulting in a smoother texture and significantly improved water retention, effectively reducing moisture loss during transportation and storage.
• Preservative: Widely used in bread, pastries, mooncakes, and other flour-based products and baked goods. By adjusting the pH of the food system and inhibiting microbial cell membrane synthesis, it significantly inhibits the growth and reproduction of molds (such as Penicillium and Aspergillus) and bacteria (such as Escherichia coli and Staphylococcus aureus), extending the shelf life of food by 2-3 times.
• Acidity Regulator: Used as a pH buffer in beverages, jams, and pickled foods, it stabilizes the acidity of food, preventing flavor degradation or nutrient destruction (such as vitamin C oxidation) caused by pH fluctuations.
• Calcium Fortification: As an easily absorbed calcium source, it can be added to flavored milk, solid beverages, milk powder, and nutritional cereals to meet the calcium intake needs of different groups (such as children and the elderly). Its good water solubility does not affect the taste or appearance of the food.

Medical and Health Products Field

• Oral Calcium Supplements: Calcium acetate has high solubility in the human gastrointestinal tract, does not require gastric acid activation, and has a higher absorption rate than calcium carbonate (absorption requires a large amount of gastric acid). It is suitable for the elderly and children with insufficient gastric acid secretion.
• Phosphate Binding Agents: As an adjunct treatment for chronic renal failure (CRF), after oral administration, it binds with phosphate ions in food in the gastrointestinal tract to form insoluble calcium phosphate precipitates, reducing intestinal phosphorus absorption, thereby lowering blood phosphorus levels and alleviating complications such as renal osteodystrophy and cardiovascular calcification caused by hyperphosphatemia.
