What is Amygdalin?
Amygdalin,A β-cyanogenic glycoside in bitter almonds, with cyanide (CN) bound to the molecule. After eating bitter almonds, it will release free cyanide, so the eater will be poisoned; amygdalin is a product of phenylalanine metabolism in bitter almonds. Bitter almonds contain β-glucosidase and oxynitrilase. The former catalyzes the hydrolysis of amygdalin into two molecules of glucose and one molecule of amygdalin, and the latter catalyzes the hydrolysis of amygdalin into cyanide (HCN) and benzaldehyde. Amygdalin is found in seeds, such as almonds.
