Tannic acid powder is readily soluble in water, especially hot water, and its aqueous solution is weakly acidic. Tannic acid can be hydrolyzed by enzymes or acids, yielding glucose and gallic acid. Tannic acid has various uses in different fields and is therefore widely used in medicine, industry, cosmetics, and food.

Gallnut has a very high tannic acid content, arguably the highest among plants. Calculated by dried tannins:

Gallnut horn tannins contain 60-64% tannins;

gallnut belly tannins contain 63-67% tannins;

gallnut flower and leaf tannins contain 20-30%.

Gallnut tannic acid is a pale yellow to light brown powder with a distinctive odor and an extremely astringent taste. Hydrolysis yields gallic acid, which, after esterification, yields propyl gallate (PG).

Witch hazel tannins are extracted from the bark and leaves of North American witch hazel (Hamamelis virginiana) through extraction and separation processes. Their bioactivities include inhibiting the metabolic activity of microbial biofilms such as Staphylococcus aureus, enhancing antibiotic sensitivity, and exhibiting potent antioxidant capabilities in scavenging reactive oxygen species such as superoxide anions (IC50 1.31 μM) and hydroxyl radicals (IC50 5.46 μM). Applications encompass natural product research, food additives, and the development of anti-infective therapies.

Industrial Applications

• In ore flotation processes, tannic acid can be used as an effective depressant for calcium and magnesium-containing minerals. It interacts with the mineral surface through chemical adsorption, hydrogen bonding, and double-layer electrostatic forces, strongly competing with the collector for adsorption, causing the collector to be desorbed from the mineral surface. Tannic acid is also the best precipitant in wet germanium extraction processes, achieving a germanium precipitation rate of over 90%.
• Used as a descaling agent in boilers and heat exchangers. Tannic acid complexes with Ca2+ and Mg2+ in water, thereby reducing water hardness and softening the water in boilers. Its complexes can further form large-particle sludge deposits that are discharged with the blowdown.
• Furthermore, it can form a dense film on metal pipe walls, passivating them and providing protection against corrosion of pipes and boilers.
• In water treatment, tannic acid can also be used to purify wastewater containing proteins and surfactants, causing flocculent precipitates that are then removed, reducing COD and preventing the foul odor emitted by proteinaceous organic matter in the water. Tannic acid, gallic acid, and other similar substances can be used as rust and corrosion inhibitors to protect ferrous metals (iron and steel) used in industrial, construction, water transport, and harbor equipment.

Leather Tanning Agent

• Tannic acid is primarily used as a leather tanning agent. Tanned leather made with tannic acid is light, soft, elastic, and has a good color, comparable to lacquer. Leather products tanned with taratanic acid are characterized by light color, colorfastness, hardness, and smoothness.

Applications in the Daily Chemical Industry

• Tannic acid has a strong inhibitory effect on streptococci; 0.25 g/L of tannic acid can achieve a 100% inhibition rate. Tannic acid can also inhibit the activity of gingival hyaluronidase and collagenase. Adding tannic acid to toothpaste can prevent gingivitis and periodontitis, and has anti-caries properties.
• Tannic acid has strong ultraviolet absorption characteristics, especially in the high-energy, highly destructive far-ultraviolet region. Tannic acid has a strong inhibitory effect on the Maillard reaction, which easily causes skin aging. Therefore, tannic acid can be used as an effective ingredient in cosmetics for sun protection and anti-aging.
• Cosmetics prepared using the astringent properties of tannic acid are non-irritating to the skin and have a moderate astringent effect, while also providing good moisturizing properties.
• Tannic acid powder can combine with proteins to form water-insoluble tannic acid proteins. Therefore, adding it to shampoo can prevent the dissolution of hair fiber proteins and protect the hair.

Applications in Medicine

• The pharmacological activity of tannic acid is a comprehensive manifestation of its interactions with proteins, enzymes, polysaccharides, nucleic acids, etc., as well as its antioxidant properties and its ability to complex with metal ions.
• Tannic acid can also be used as an antidote for alkaloids and some heavy metal ion poisoning because it can chelate with them to form precipitates, reducing the body's absorption. Furthermore, the complexation of tannic acid with extracellular or extratissue calcium ions can resist calcium-induced contraction in smooth muscle and lower blood pressure.

Applications in the food industry

• Edible tannins can be used as clarifying and stabilizing agents in beverages and alcoholic drinks. They can also combine with plant fibers to form solidified tannins, serving as filtration adsorbents for alcoholic drinks and for iron removal and decolorization of soybean soy sauce. Due to the presence of phenolic hydroxyl groups, tannins possess excellent free radical scavenging capabilities and can be used as food antioxidants. Food-grade tannins are excellent preservatives for wine.
